Hello all,

I have a newbie question for ya. How long does corn (cut off the cob) keep in the freezer?
I was thinking of doing a bunch of it while it is still in season and freezing it. Then I will have it when I need it.
I've been lurking for a while and learning from all of your posts. You do seem to have a wonderful group of people on this board.
If your curious I'm in the third week of RAW living and loving it.

Hey Kev!

I think that has a lot to do with how you are gonna freeze it.
My sister in law does her's a few different ways. She grows a HUGE garden in Upper Minnesota so there are LONG Winters.
She freezes some in the Plastic square containers in the water that she soaks it in. She uses those for soups and stews. (SHE IS NOT RAW AT ALL)
She also has a vaccum bagger and that she does with no liquid and its quicker to thaw out and lasts all through winter no problems.

I want to try and dehydrate a ton for munching on after the season is over. YUMMY! and it doesn't have to be frozen!!

CORN is my Comfort food and the raw sweet corn that I have been getting is so good, I tell ya, I feel myself growing a tassle off the top of my head!!! :D

Yes, I think the best way would be with the vacuum bagger for freezing. And I also agree that dehydrating would be a very good way to go. You just have to rehydrate to use in things.

These would produce two different tastes/textures and I am sure each would have its own best use. Experiment and do both.

I use a foodsaver and my corn lasts for months in the freezer. Never opened up a bad bag yet. Here is a great summer corn recipe.

Corn Salad with Cilantro Dressing

Salad:
4 fresh Corn Cobs, stripped
1 diced Red Bell Pepper
1 Avocado, cubed

Dressing:
1 minced Garlic
1 small Onion
½ Jalapeno Pepper
1 small bunch Cilantro
1 Lime, juiced
½ tsp Sea Salt (or to taste)
2 tsp Flax or Olive Oil
½ tsp Cumin Powder

In a medium bowl, combine the corn, red bell pepper & avocado. Set aside. In a blender, Vita-Mix or food processor, combine the dressing ingredients. Pulse until the cilantro is finely chopped. Mix the dressing with the salad. Enjoy!

Thank you for taking the time to reply. I think I will try the vacuum bags (one more gadget to get) and dehydrating. Dehydrating crossed my mind. I'm sure I read it in here some where. The vacuum bags seem more user friendly as far as time is concerned.

P.S. Thanks for the recipe. I can almost taste it now.

you can sort of half-ass vacuum your bags out by using a ziplock and a drinking straw, zip almost all the way to the end leaving the straw sealed there and squeeze out the excess air then suck the straw to get the last of the air out. It can also be done with non-ziplocks but it's eazier with the ziplock.

it will last you until next corn season, especially if you have a good deep freezer. Make sure you cut it off the cobs, it doesn't work well to freeze it on the cobs. Raw Priestess mentioned a while ago that she freezes corn in almond milk.

Thanks Doubleg! I use frozen corn in Alissa's tortilla recipe when I make enchiliadas and I use it in my flax crackers sometimes. I havent used frozen in my corn salad yet since fresh is in season, but I have used frozen corn in my chili. I just let it defrost for a bit. I will probably make corn chowder this winter too.

Hi and welcome! Do you shop at Jungle Jims? I LOVE that place!! I have been eating their corn. I cut it off the cob and freeze it regularly. It helped me through the winter months.

(I also go there for young thai coconuts and the oxygen bar rocks! If you are interested, Dayton has raw food potlucks the 2cd and 4th Sunday of the month. If you give me your email, I'll forward the info to you!)

will keep for months if packaged properly. We package ours early-mid summer and freeze it to use all winter.

It all sounds good to me. I just eat whatever is in season. I- O.D. on it and when that season is over. I start on something else. I have had more waste freezing things. I forget about it, then it is bad and I have to throw it out. That does not work for me.........Hope it all works for you........... Welcome to MY World.............

I made the corn salad yesterday, it is AWESOME!! My boyfriend does not like corn and he loved it.
I used an whole jalepeno, mostly de-seeded, for a little extra kick.
