It's HARD! Would dehydrating it make it softer?

Hard? I've never had it hard and I've made it quite some times by now as I love it.. To me it has just the right softness.. Maybe your squash was not ripe enough?

That is what I was wondering about too. I use zucchini with great success. Other, firmer veggies would yield a different texture which might be totally what you want or you could come to appreciate if you are prepared for it.
But if by "spaghetti" you mean the overcooked too-soft starchy noodles that most of are used to, then no, that's not it.
I always read that the proper way to cook spaghetti is to the al dente stage, which is much firmer than most people eat. When I think of zucchini spaghetti, I think "al dente".
A person might want to try for a softer product or to use another firmer vegetable and get it softer, by marinating it and dehydrating for awhile - not to the dry or leather stage - but limp. I haven't tried that, but I would think that dehydrating it might make it pretty rubbery, even if a person were to soak it to rehydrate.

I put it in the dehydrator to warm it. I like it with tomato marinara on it !

:D It is delicious. I put it in my convection oven on low for around 1 1/2 hour and slice it open and use a fork to get the noodles out.
I add chopped tomatoes, red peppers chopped, sweet onions chopped, with avocados chopped, it is sooooo good.
Try it you'll love it.
Also add sauce of your choice i do dried tomato and olive oil blended smooth.
