Okay, so I'd have called it Almond Joy, but since I'm allergic to almonds, I had used pecans instead.

I made R.P.'s brownies, tripling the recipe and adding about 1/4 cup coconut oil to it, a few extra dates (just because they were there), the pecans, a sprinkle of salt and a sprinkle of vanilla powder. Not sure if vanilla powder is raw or not, but you could use a bit of vanilla bean if you had it. I also added not quite 1/4 cup of water at the end to make it more moist.

The additional dates gave it a bit of a sweeter taste and the coconut oil makes it taste like an Almond Joy candy bar. I'm sure some coconut added to this would be super good too, but I didn't add it because I'm the only real coconut lover in this house. My daughter didn't seem to care for this version as much as the original. She really doesn't like the taste of coconut and I added enough of the oil to where the taste is coming through. I really like it though.

Okay, so now I'm up to my ears in this stuff! Decided to make another batch with coconut in it. Didn't get very much of the last batch because my husband ate it all!

Started with 24 oz of dates then added some pecans, some coconut oil, some coconut and not quite a cup of cocoa. Also a bit of salt and vanilla powder. Blended it and decided that it didn't taste chocolately enough or cocoay enough so added a bit more cocoa, all the coconut I had and then the rest of the pecans. I then had to add more water. And a little more coconut oil. I might have added a bit too much water, but I don't think that will matter. The mixture seemed to resemble fudge. Now real fudge is something my husband won't touch, but he sure loves this stuff! I wound up with two loaf pans of it...one full to the brim and the other not quite. Oh my! I did put a lot of coconut in it, but I wish I'd bought more. Then again, no more would have fit into my food processor. Heh! Bet this won't even lat a week.
