View Full Version : Non-Tomato Noodle Sauce Anyone?

I really like squash noodles.
However, I don't really like tomatoes or raw tomato sauces.
Besides alfredo (which I like and eat), does anyone know of any sauce recipes for noodles that does not contain tomatoes?

Please help.

Alissa's Butternut noodles with golden curry sauce. It is absolutely fantastic!
I try hard not to make it every week because I don't ever want to get tired of enjoying it so much.

Pad Thai is made with almond butter and sweetener, I didn't think I'd like it, because I never liked it cooked, but it is excellent

I also like curry sauce, and creamy sauces, stroganoff is excellent, I use a nut cream base and spices, very good, pretty much any veggies can make an excellent sauce just blend them up.

marinated onions, dehydrated are very tasty too, over squash noodles, add a bit of almond butter, and some spices,mmmmmmmmmmm

a good pesto! You can make one with basil, olive oil, garlic, pine nuts, and/or a sundried tomato pesto, or a different pesto, I've seen chili/lime/cilantro, etc. You could also do something with coconut milk and cream, something thai, like adding lime leaf or grated lime rind and thai basil and ginger and tamarind. Lots of options for sure.

Wow! You guys are really on top of it.
Very creative and interesting ideas.
I never would have thought of blending any old vegetable for a sauce, but that sounds so logical and easy.

My apologies for not remembering that the curry sauce calls for a tomato. I usually use an orange or yellow one to keep the sauce light colored and for the low acid, but it would probably be just as good without it. (Now I will have to try it that way just to see).

I like to marinate veggies like sun dried tomatoes, portabellas, onions, peppers, etc in a zesty dressing and then toss with the noodles and add some pine nuts and nutritional yeast.

Or blend up some young coconut flesh (optional) and some coconut oil with garlic, ginger, fresh chili and a lemon grass stalk (just the lower inside soft part) into a small but highly spiced flavoured cream. Just stir some of that through to taste, and top with chopped corriander. It's delicious!

Simple sweet and sour:

Blend:
-the flesh of 1 large mango
-juice of 1 orange
-juice of 1 lime
-1/2 a red bell pepper
-a few leaves each of cilantro, mint, basil

YUM!!!!!!!!!

Probably good on cucumber noodles.

Lay-lay's Alfredo Sauce

1/2 cup almonds
3/4 cup of water

Vitamix on high

then add

Italian seasonings
1/2 lemon squeezed
1 clove of garlic
1tsp cayenne
1tsp sea salt

Vitamix on high

1/4 cup of onions chopped
1/4 cup of olives chopped
1/4 cup of tomatoes chopped (you can leave them out if you wanna)
1/4 cup of mushrooms chopped

Vitamix on low (optional to add in a little olive oil slowly if you wanna)

Serve over mock pasta and ganrnish with kale or parsley

Very yummy!

You can chop up some bell peppers, musrooms, carrots, celery, onions, basil and whatever other Italian seasonings you like. Then puree it to the texture that you want. If you want it look like tomato, then use red bell peppers.
