Could anyone please tell me why I don't see any recipes with potatoes in them? I have always liked raw potatoes...

I think you don't see recipes with potatoes in them because potatoes are not interesting to most raw fooders. Not bad, just not great either. If you like them, eat them. I made slender strips like McDonald's fries out of raw potatoes and ate them. I've heard Jicama makes better "fries," though.

Hi guys- here is a link to a search of the threads that we had not long ago pretaining to potatos... I did a thread search, so sorry if a couple of them arn't really about potatos... if the word is in there it sometimes will pop up, but there are only like 5 or 6 of them anyway- so happy reading :)

Hope this answers some of your questions...

The Boutenko's recipe book that has their children's favorite recipes in it, has a soup using raw potatoes. I think it needs some work, but I was at able to eat in my burritos using collard greens as a wrap.

what about potato chips? Not sweet potato, just the regular Irish murphy's. Spuds. Plain ole' potatos. Anyone have a recipe?

Yep, I'll post it tomorrow. There is also a recipe for making the BBQ flavor, I'll have to dig for that one.

Raw potatoes are way too starchy for most folks. I have made that soup recipe by the Boutenkos and did not care for it. Every recipe I've made with raw potatoes never turned out very good. Usually soaking them in salt water helps though.

I've seen one or two that had raw potatoes...one was a soup and the other just called for peeling and cutting into strips like the 'french fry'. Personally I LOVE eating yams and/or sweet potatoes. And I was a diehard potato fan - baked, fried, mashed..... :)

This is what Nora wrote on her website:

"All vegetables that grow underground are modified roots. One job of a root in nature is to store nutrients for the plant above. Starch is one of nature's best food storage mechanisms, and it promotes storage on our bodies, too (fat). These foods are too excessively high in starch and cellulose to be considered optimal. They are also low in nutrients. They are commonly cooked because of their indigestibility in the raw state, which is no answer because cooking causes harmful oxidation and destruction of nutrients. While these foods are not optimal, they can be helpful in transition (eaten raw) because, like nuts, they can provide a feeling of "fullness"."

Makes me think about our friend, The Carrot. Also red & yellow beets, easter egg radishes, jicama and yams & sweet potatoes. I wonder why God would create food like that, that is beautiful to look at (aside from the lowly jicama) and good to the palette if it wasn't meant to be eaten?

Sharon, I guess the same reason Cannibis (sp?), cocoa, and a lot of other things we find in nature...that were created by God but are deemed not the best for us (although we ...well...urr...some of us still use them anyways).

Okay, probably far from the same category and I know you mentioned these things looking good and being pleasing to the palette...for me, any potato in raw form (not dehydrated either) isn't the best tasting..too starchy, even sweet potatoes. And radishes and beets...BLECH! I could only have those juiced with something else or cut up finely in a salad...WELL hidden! LOL!

I've tried dehydrating white potatoes several times, soaking in cider vinegar, sea salt and just plain water each time and they always end up awfully starchy (YUCK)!

I believe that all that God created is good, but not always expedient for us (think of the fruit of the Tree of the Knowledge of Good and Evil ;)...beautiful, I'm sure it was delicious, but look where it got us

I know one thing for sure, if I had to choose between beautiful, colorful fruit and beautiful colorful roots...I'd choose the fruit! :D

Edited to Add: I DO enjoy eating carrots, but find that if I eat too many, I get indigestion!
