I love eating raw fruit all day but one time I put some banana in the freezer and it tasted like ICECREAM it was SO good.
I don't ususally freeze fruit but I was wondering if anybody knew if freezing destroys bananas.. it kinda seems like it would...

Opinion:
Objectively: I believe (my opinion) is that frozen food is simply not as vital and healthy as fresh. However, if YOU feel you are better able to transition or be healthier with it...or to eat more fresh raw plant food by including it in your diet....then I would say go for it! :)

Do a search on banana ice cream or just ice cream and you will find a grand array of recipes for frozen bananas.
i read somewhere that freezing fruit destroys the molecules or something (because water expands when frozen). however, i cannot recall it exactly or know the link. maybe you can google some info up and if you have found interesting links, post them here? i agree with david mason that they aren't as vital anymore when frozen. i wouldn't feel vibrant too when frozen, teehee... in the beginning i made popsicles from fruit juice etc. tried the banana thing too. can be nice every once in a while, esp. when the weather's hot. i liked it then. in time however, i noticed i personally like fresh fruits the best. nowadays, freezing kind of ruins them for me. in the beginning, it was a good treat for me though. i'd say, if you like it and if it makes you feel good, go for it. it sure is a lot better than conventional ice cream!

The only thing I will freeze is bananas so I can make it like a pudding or ice cream but I believe that freezing things lessens their vitality and if you freeze something and then thaw it, the texture usually changes to a mushy consistency. I've just never really liked freezing things and even though I occasionally eat dehydrated things, I feel that it also takes away vitality. To get the most out of your raw vegan foods, the best you can get is strait from the vine/tree/bush/ground etc, and the next best is from a farmer's market, then the next best is from a supermarket and the furthest from that is by mail. Even refrigeration or fruit sitting out detatched from the vine means it is losing its nutrients every minute, so some people advocate freezing because it stops the rotting process but I've never liked it much, except for bananas sometimes. I don't think it would be too bad to eat a few things that had been frozen, but make sure that what you mainly eat is as fresh as possible.

Eating fresh fruit is always much much better than eating the frozen one. And, eating too much of the frozen stuff may not too healthy either. Nevertheless, I see no problem with having some fun with raw icecream, especially if this helps in the transition to raw. In the past, I made many different types of raw icecream. Plain banana, or banana and bueberry, or banana and raspberry, or a three-layer one (quite some fun for the kids). You could add some raisins and carob to make a "chocolate one", or even add some crushed nuts. Endless possibilities. Actually, I am going to make some icecream for my cooked friends when they visit us next.

Question about freezing bananas: Is it customary to peel them before freezing them?

It's best to peel them before freezing.
I've always love frozen fruit. I had to freeze some figs because I got way too many of them and wow, they are amazing frozen!!!

Haha! I remember the first time I froze bananas for raw 'ice cream' and I didn't peel them first! The peel became one with the banana. it seemed like it was bonded with super glue! When they finally thawed, the banana inside was total mush (I know that is the idea but it didn't look or taste right). So now, I peel!

You can freeze whole bananas with the peel. All you have to do is run the frozen banana under warm water and within a few seconds the peel is thawed enough that it'll come off with out much fuss. Then the inside of the banana is still frozen so you can make icecream or whatever.

I love to freeze fruit to eat especially in the summer. My favorites are grapes and cantalope.

Frozen fruit holds up nutritionally well, even over a few months without dire consequences, in regards to nutritional content (vitamin C takes a big hit however so hopefully your getting more than you need from other fresh foods in your diet).
Whether one wants to assess a metaphysical construct like 'vitality' of food being passed on in some fashion is certainly an entertaining notion. The living organism is an appropriating one. It creates it's 'own' vitality given the proper requirements it needs to do so. One needs calories to function metabolically and micro nutrients to assist in all the various activities of life building and sustaining.
This can be had eating some frozen fruit within and already sound whole foods diet. Not to worry..... eating it too cold is more of a detriment to digestion more than anything nutritionally.
Bon Apetite.
