View Full Version : sub for zucching for raw pasta

Does anyone have any suggestions? Zucchini is rather bland. I thought of spaghettti squash or butternut squash, but have never had either one raw before. Can you eat them raw? Do they require any kind of soaking or anything?

I have used them and no I didn't soak them. You could also use carrots and I am fixing to try jicamma to see if that works.

I do carrots and parsnips with a fresh basil-pine nut pesto/alfredo sort of thing, with some sundried tomatoes, and pine nuts sprinkled on the top, and a little chili pepper... not bland, actually pretty wow.

I love parsnips for noodles, or turnips are great too.
