View Full Version : Apple Slices with Caramel Cream

This is an easy recipe, so someone might have already come up with it. I have to say this is in my top 10! Kids would love it. It tastes just like caramel apple dip.
Caramel Cream:
10 dates soaked
1/2 Lime reamed
1/4 c macademia nuts
water
This works great in a super blender like a Ktec or vitamix. Put pitted dates and lime in blender with just a few nuts. add a little water and begin to process. Add a little more water so it turns over, then add a couple nuts at a time, continue to process until the mixture is completely creamy--the key is adding just enough water and nuts a few at a time. Recipe makes enough dip for 2-3 apples.

Sport, a reamer is a plastic device that is used to help remove the juice from a cut lemon, grapefruit, or orange. If you have a citrus juicer of any kind, a reamer is just like the center part that you mash the fruit against. It has a handle and is hand held. Alissa uses one in her video. Next time you are in the states one could be picked up for a dollar or so depending on where you get it.

Mmmmm...this will be my lunch today! Thanks for the welcome back, Doe. I asked Alissa to remove the "moderator" status a while back, but it's still there.
I like to ream the lime because it gets more out of the lime that just the juice, kind of scrapes it all out.

I finally got around to making this and it is FABULOUS, so I wanted to bump the recipe up! I posted my pic of it in the Photos Only thread. This is definitely one of those recipes that makes all the SAD eaters perk up and go "what? this is raw?" YUM!

Let us know if the lemon works Walkin'OnWater! I don't doubt it'll be delicious, of course. I LOVE lime, so I usually sub the opposite: lime for lemon - and it always seems to work out fine!
And yup Luna, it's basically the juice of 1/2 a lime. I had to read the directions twice too!

Thanks. :) And while I'm at it, and please pardon my ignorance, I haven't gotten Alissa's book yet... how long should I soak the dates?
This recipe sounds awesome, and I at least have a blender right now, so I can even make it before my dehydrator gets here, hehe.

I didn't really check, honestly. I soaked mine for maybe an hour? I was in a hurry!

LOL, I gotcha. I just wanted to make sure it wasn't something like, "soaking means overnight" or "until they're rehydrated completely" or something.

Wow.. this was great! I just made it with cashews, lemon, and dates. I soaked the dates an hour. I put the dry cashews in the food processor first and ground them up. The only problem was that the dates weren't completely ground up, but the taste was AWESOME and was so much like caramel I was amazed.
This will be one for when the grandkids visit!
And tonight.. it was dinner! :D

Hi, I am making this receipe today! Sounds delicious.
I couldn't help laughing when someone asked " what is reamed"! Very cute, and I didn't know what it meant in relation to a lime-- The only deifnition I knew was like " I am totally going to get reamed for screwing something up!" LOLOLOLOLOLOL :) :)
Too funny! ok.. so now I know! :-)

I just made this for myself (only with lemons, no limes in the house) and my mainstream dh stole half of it for himself. :D
