how do i open it?
does it have to be organic....b/c i can't find organic ones and the asian markets have some, but they aren't organic :(
any good recipes...not smoothies, more like drinks.

I've never seen organic coconuts here... just the regular brown ones and the Thai ones with all the white stuff around it.
I take a good sturdy paring knife and *carefully* jam it into the coconut, set it over a glass to drain the juice (mmmm) and then put the thing into a huge ziplock baggie, take it outside, and slam it on the concrete a few times until it cracks open and I can scoop out the meat. This looks funny and causes entertainment for neighbors. :p
I usually just stick a straw in and drink the juice, and then use the meat in my smoothies :D

Well a good thing to know is that out of the 3 spots on the top of the coconut, 1 of them is always soft and easy to poke a hole through. Take a sharp, thin object like a skewer and find which hole is the softest. With only a little force it will go through and make a hole. You can get the juice out this way by sucking it or if you can make the hole a little wider, it will pour. For opening it totally, I drop it on the concrete down below our second story apartment balcony. Always works like a charm. As far as pesticides, don't worry, one of our raw foodists here did a test ( I hope I explain this accurately) where she submerged some coconut meat and a whole coconut in dye for a good while and the flesh didn't take any of the dye at all and when she opened the other coconut, the dye hadn't penetrated at all. The parts of the coconut we eat are WELL protected in that dense, hard shell. I wouldn't worry about it if I were you.

when opening a young coconut or the ones that have white all around them. I just take a large butcher knife and hack at it around the top in the circumfrance of a circle until you feel the knife go through the hull of the coconut or you feel some dampness which indicates that you've broken through. Then just use the knife as a pry - bar to open the lid up. Becare not to hurt yourself. If you drop any little pieces of the white stuff or any off the hull, just spoon it out. Then take a straw and suck out the juice - which should be clear as water. And the meat inside should be white and very soft.
After drinking the juice, just take a soup spoon and scrap out the meat and eat that as well.

It's a LOT easier to watch the video. People were trying to explain it to me in words, and it wasn't working. I tried what I envisioned them to mean, and had no luck. Once I watched the video (I think it was the RawGuru one) I totally got it and it's been super easy ever since. Good luck! They're great!
ETA: I've never seen any organic coconuts anywhere. :(
