View Full Version : How not to make eggplant chips

Ok... I soaked the chips in water and salt, as I always have, to draw out the bitterness that eggplant has so often.

Evidently I used too much salt.

I oiled them a little bit in olive oil and pepper then put them in the dehydrator... excitedly trying one after they've been drying for the past 12 hours.

It was like biting into a salt-lick.

LOL I guess rinsing them afterwards would have helped. Anyone else have a seasoning error?

Well I haven't had that problem with eggplant but I made that Rich Cheddar Sauce recipe and doubled it and that included doubling the sea salt and it was so salty. I just added another batch and a half to make it taste good and froze the extra. My big thing is sea salt and I've ruined almond butter by using it so now I use half of what the recipe calls for and then add more in later. For almond butter I use no salt at all to be safe.

Have you made the eggplant "bacon" - it's SO good. If you want to make it I'll look for the recipe and post it. :)
