View Full Version : Wonderful Pad Thai sauce

I adapted the Pad Thai sauce from Elaina Love in The Complete Book of Raw Food to the following and it was fantastic!

1 T dulse, soaked for 30 minutes
1/4 cup almond butter
1/2 cup sun dried tomatoes, soaked 1 hour
Juice of 1 lime
4 cloves garlic
7 dates, soaked 1 hour
1 T zested fresh ginger

blend in processor and serve!

this sounds great! I have been on the look out for a peanut-type-sauce for thai cabbage salad. Yuuuuuumy!!!

I just tried this, although I adapted it even more. I don't know what dulse is, but I guessed it might have something to do with kelp, so I used 1/4 teaspoon kelp. And I had no dried tomatoes so I used three plum tomatoes. And I only used three dates because I've never used 7 dates in anything! I used half tahini and half almond butter because it seemed like a good idea. And I used 1/4 teaspoon of powdered ginger. And I didn't soak anything because it was a last minute impulse. Then I wondered if it really needed more dates, so I added a little agave on top and some salt. I put it in the Vitamix til it was pureed instead of the food processer. I mixed it with flat cucumber noodles.

And it wasn't bad! when I had a bite where I could taste the dates, it actually did taste like Pad Thai! Maybe if I follow the recipe closer next time, I'll be in Pad Thai heaven!!
