There are a lot of recipes in both raw and cooked books that call for sake, red wine, etc.
1) What is the purpose?
2) Is there a substitute? (I can't consume any alcohol)

Hmmm I think it is just for flavor so you are probably fine just leaving it out altogether but I remember WAY back in the day for fondue with wine I use get them to put in apple juice instead because I never liked the alcohol flavor. So depending what it is you could try different juices.

Grape juices, cranberry juice, pomegranate juice will work.
I like the rejuvelac recommendation. Perhaps the kombucha or rejuvelac for sherry, especially.

Thanks for all the great suggestions. I like them all.
I can't use kombucha because I think there is very little alcohol. I tried it once and got very red and dizzy after a few sips.

It's just for flavor? But alcohol doesn't have much flavor, or does it?
