I got some collard greens to make collard wraps (and I made a few), but the remaining leaves have too many holes to be properly utilized for wraps. What are some raw recipes that you guys have that use collard greens?

If you like "southern" type greens, here is a recipe by my friend Jacki:
(you can adjust the amounts as needed)
2 lbs. Kale and collards (organic is best)
red onion
celery
red bell pepper
jalepeno (optional)
1 clove garlic
Sea salt
¼ c. olive oil
Juice of 3 lemons (or 6 TBS. of apple cider vinegar)Wash the greens and rinse them thoroughly.
Chop the red onion, celery, and red bell pepper, jalapeño and garlic and put it aside until ready to add. Sprinkle a little sea salt on those veggies as well.
Roll the greens up (you can do this with any size) and cut them into ribbons - this really makes a difference to me as they marinate. Add the juice lemon juice and mix all together with your hands. Finally, I add the other chopped vegetables, mix and then let them sit overnight; they will eventually look cooked in a day or so.
You could also make Alissa's Marinated Kale (if you have the book) and sub collards for the kale.

Thank you for the recipe! I so love collards and put them in my green drinks (just one leaf). I don't get to enjoy them like that. Laurina
