I have a box of wonderful nectarines and would love to make a peach/nectarine type cobbler or crisp.

Any recipe ideas would be appreciated and I have most raw food uncook books if you have a favorite recipe and could point me in the right direction that would be great.

Peach Pie

Crust

2 cups pecans
½ cup raisins, soaked
1 T. olive oil
Grind pecans first, then add raisins and oil and continue to grind until well mixed. Roll or press into oiled pie plate.

Filling


4 large peaches
Shred in food processor.

Sauce

2 large peaches
1 tsp. cinnamon
1 T olive oil
¼ c raisins, soaked
Blend together until well mixed. Doesn’t have to be smooth.

Directions

Mix the sauce with the filling and put in crust. Cut and serve.

I have one that I created that is a little more involved than the above recipe, but is closer to a SAD pie/cobbler IMHO if that is what one is really craving:

Peach Delight

Crumbly Crust/Topping:
2 c. UNsoaked (or soaked/dehydrated) nuts of choice (I personally used a combination of almonds and walnuts)
1/4 c. raw agave nectar, honey (preferably raw) or soft, UNsoaked dates (preferably medjool)
1/2 c. ground oat groats or organic rolled oats (grind in Vitamix or coffee grinder) - If you object to using oats, you can use an extra 1/2 cup of nuts.
1/4 tsp. sea salt
1 tsp. coconut oil (opt. but provides a slight "buttery" taste)
dash or two of cinnamon

Filling:
5-6 fresh peaches or nectarines (can substitute with apples if peaches/nectarines are not in season)
1 c. soaked and pitted dates (drained)
2 TBS. raw agave nectar or raw honey
2 tsp. cinnamon (or to taste)
1/2 tsp. sea salt
1/2 lemon, juiced
1/4 tsp. allspice or nutmeg (opt.)
2 tsp. coconut oil (opt. but provides a slight "buttery" taste)
1/2 - 3/4 c. water

Crust directions - Place all crust ingredients in a food processor and pulse until crumbly. Move from processor to a bowl and set aside.
Optional Step: If you want the crumbly crust to be kinda crunchy like a SAD crumb topping, dehydrate for a few hours or overnight.

Filling directions -
Process all filling ingredients except the peaches (apples) into a creamy sauce using either a blender or food processor and adding small amounts of the water at a time to help it blend and get the desired consistency. Set aside in a bowl. Wash, peel and chop the peaches into desired size (cubes or slices) and mix with the sauce in the bowl. If using apples, peel and core the apples. Optional step: Allow to marinate in refrigerator for at least 2 hours (overnight or 24 hours is even better!) This step (marinating) is optional, but makes the peaches soften up and absorb the flavors of the sauce better...but you can make this all at once without marinating and it's still good!

Assembly -
1. Sprinkle half of the crumbly crust mixture into the bottom of pie dish or pan of choice (or you can just skip to step 2 and simply put the filling in the pie pan and sprinkle ALL of the crumbly crust mixture on top!)

2. Spoon the filling on top of the bottom layer of crust (or pie pan) evenly. Sprinkle the remaining (or all of) crumbly crust on top of the filling. At this point, you can either (if you have a dehydrator with removable trays that allow tall items to fit) put the whole dish into the dehydrator for an hour or two OR you can serve right away.

Keep any leftovers in the refrigerator. You can also spoon out single servings onto dehydrator proctective tray (teflex, parchment paper, etc.) and warm in the dehydrator!

Serving suggestions: Serve dehydrator-warmed with Vanana-Banilla (basically, banana ice cream with 1 to 2 tsp. vanilla added) Ice Cream for pie ala'mode (as shown in pic below)!

Well I was going to post a peach pie recipe, that could probably be turned into something like a peach cobbler, but after seeing Rawkinlocs, gosh, that is beautiful!

Well I will post it anyways, someone might like it.

I got this off of Jinjee and Storm's website.

Creamy Peach Pie

Filling:

Slice up 4 peaches in a bowel.

Sauce:

Two Peaches
1/2 of young coconut meat
Dash sea salt
Dash nutmeg
Dash cinnamon
Dash olive oil
2 Medjool dates
One tablespoon of honey
Blend up together to make a sauce.

Crust:

Grind up one cup of almonds w/ a dash of sea salt, nutmeg, and cinnamon.
Add one Tablespoon of honey, dash of olive oil, four dates. Blend again then pour in bowl and kneed with hands. Form into two crusts on two plates. Stir sauce and filling together and pour into crust.

Thank you everyone for the wonderful sounding recipes and the picture Rawkinlocs posted is beautiful! I think that is the recipe I will try out tomorrow, I'll post how it turns out. Thanks again everyone and if anyone has another version please post so we will have even more ideas of how to use our delicious fruits this summer.

Thanks everyone for the compliments on the pic. It really IS a good recipe IMHO. I was having a MAJOR craving for pie ala mode and it really hit the spot for me and peach cobbler was always one of my favorite desserts that my mama used to make for me all the time!

I like this recipe with peaches or nectarines, but I think I prefer it most with apples, which is so interesting to me because I never really liked cooked apple pie and would always pick the apples out. I guess there was just something "not-quite-appealing" about mushy, cooked apples to me.

But raw apple pie with the apples slightly crisp...SOOO good!

If anyone tries my recipe, please do let me know what you think!

Great idea to use apples, that would be perfect in winter time too when the other fresh fruits aren't available. I'll sure let you know how it turns out... can't wait to get uncooking in the morning!

Wow, Rawkinlocs I just made it with blackberries and it was AMAZING!! I am thinking next time, of omiting the fruit, doubling the topping using almonds, walnuts and pecans and making the sauce much thicker (adding some vanilla) to make a bear claw! Yummy!!

Here is a link to gliving where vanessa makes a cherry cobbler with a killer custard. I have had this recipe and it is divine!!! I am sure you could subsitiute the frozen cherries for chopped up frozen peaches/nectarines.
You are supposed to unfreeze in the end so maybe just using them fresh would work--cause they are different then cherries--oh I don't know.
But anyway the custard is so good on top!!

So many great ideas, I need to get more fruit for recipes and not just keep eating it plain! Still haven't made a cobbler yet, but I will soon and I'll post what I did and how it turned out. Thanks to all who have responded!

If you wanted it creamy, you could add the meat of a young coconut or 2 and maybe some of the water. I made an absolutely delicious smoothie this way last week using the flesh and juice of very ripe peaches and mangos as well. so summery and perfect.

I made Rawkinlocs Peach Delight last week and it is soooooo yummy!!! I ate so much of it you would think I feel guilty.......but I dont :D ! This recipe is a definite keeper. My family loved it. Thanks Rawkie!!!

I made some this weekend and I made the crust with almonds instead of walnuts and I dehydrated the crumbly crust overnight and allowed the fruit (I used nectarines, red apples and green apples) to marinate in the sauce overnight and just spread the fruit/sauce into a pie plate, crumbled the crust on top and it was great!

Only thing I'll do differently next time than what I experimented with THIS time is to NOT marinate the fruit in the dehydrator. It made the apples softer but tht was what I didn't like about cooked pie so I like it better with the apples crisp and also, I didn't peel the apples this time and I definitely like them better peeled in this recipe. So, play around with it as there is a lot you can do with the recipe to make it what you want it!

Okay Rawkinlocs! You got me moving this morning! I've got peaches, nectarines, frozen and thawed cherries and raspberries in a bowl getting ready for their sauce to marinate for a bit while I make the cobbler part. It is gonna be sooo good! I'll report back on what I ended up with (combining several recipes!) and a picture to go with it! Yummy!

I'm back... and can't wait to get this out of the dehydrator to try some! Here is what I did.

4 peaches (or nectarines as I had 2 of each!)
1/2 bag frozen cherries
1 bag frozen raspberries
2 dates
1 tsp. lemon juice
1 T. agave
1/2 cup of fruit (from the fruit listed above)
In the Vitamix combine dates, lemon juice, agave, and 1/2 cup of fruit and pour it over the fruit and mix. I put this in a casserole dish but a pie plate would probably have been big enough.

Then for the topping-
1/2 cup pecans
1/2 cup walnuts
1/2 cup oats (used groats in the mill grinder to make flakes)
2 dates
1 T. agave
cinnamon
Process in Vitamix till crumbly and put on top of fruit and press down a bit. Then put in dehydrator. I did this because I don't think the fruit was completely thawed and I don't want to eat it frozen!

I think I will make the custard from the website posted above and I'll post a picture of it all later on! YUMMY!

Here it is and WOW is this good! I ate 1/2 of it already with 2 bowls of banana ice cream on top! Thank you Rawkinlocs, the only real variation I made on your recipe was the fruit combo which I think I'd change each time for the fun of it anyway. Yum!

Yep, that's what they say! But some people (such as myself) don't object to or stress out about using them so...

That's why I stated in the ingredients list for the recipe:

1/2 c. ground oat groats or organic rolled oats (grind in Vitamix or coffee grinder) - If you object to using oats, you can use an extra 1/2 cup of nuts.

and I did that for those who don't want to use the groats. But one CAN get "truly raw" oat groats from online sources such as Alissa's site (I think she still carries them) if they so choose.

Cinnamon: That looks DELICIOUS!! I had never thought to use other fruit such as berries...I'm glad you enjoyed it!

What a wonderful recipe, Rawkinlocs! I made it tonight using a row of raspberries on the bottom, strawberries blended with the lemon juice and dates for the filling, then pecans, walnuts, dates, cinnamon, and coconut butter for the crumbly topping. Awesome!

Ive made this recipe several times and I love it everytime. I can not wait to see what Vanessa Sherwood has come up with from her trip to Vietnam.

I thought I'd post these (I posted them in the photo-only thread as well).

These came out wonderful and I followed the directions without deviating (I usually deviate so much it can be to my detriment).

Also it stays neater if you chill the whole thing first and then scoop out the individual slices and dehydrate on the serving plates. When I dehydrated the whole thing, it was a bit messy when scooping out. Still delicious though.

Also I had made so much that I ended up scooping individual portions and cling wrapping and freezing them.

I made this for Christmas dinner.
I used just almonds, no walnuts or oats. Honey and 1 date for the crumble.
The filling was 120g of blackberries, equal volume of cherries, and 1 apple.
I marinated it in the dehydrator for a few hours so it was lovely and warm, and the apple was soft.
I made icecream out of frozen bananas, a small handful of pecans, a tiny pinch of salt, and 1tsp coconut oil. I've never added pecans before and was amazed at the difference it made - much more like real icecream. My mum said "the icecreams incredible, just like the real thing, how did you do that?" I didn't tell her it was just frozen banana, I thought that would spoil it. ;)
I asked her if she liked it and she said it was "out of this world". I asked her for marks out of 10 and she said 12.

I tried this recipe (rawkinlocs version) today with the apples. Instead of using groats I used all almonds and I used the custard made with coconut from gliving from their cobbler recipe. I also put the sliced apples in the freezer for a few hours to soften them before I assembled the cobbler. (according to the gliving recipe version, freezing fruits and then thawing will give them more of a cooked/softened texture) I popped it in the dehydrator to warm while I did some other things around the house. When I came back it was slightly warmed and delicious. I am definitely pleased with the results of freezing the fruit first. I ate my apple cobbler while the rest of the family had their cooked apple cobbler. A yummy time was had by all!

Hi, I just wanted to say that I also made this recipe with apples for Christmas. It was delish!! Everyone, even those who didn't know it was raw, just loved it.

One tip: I had extra topping since I didn't do a bottom crust. I had put it in the dehydrator by itself while the apples were marinating in the fridge so it was a good and crispy crumble before I warmed the dish as a whole. We just so happened to be out of our oats (I get raw oat groats - proven by sprouting! here at my organic food store) that we use for cereal and I threw the crumble topping in a bowl with chopped fruit and almond milk. It was the best GRANOLA I have tried yet!! Much better that those made of all nuts and more difficult to make. Actually, with a few minor changes, it is my standard recipe now!

She also mentions apples instead of peaches, which should be timely for you folks south of the Equator.

Actually, I made a Peach Cobbler this morning and was disappointed with it. The recipe said to process all the peaches--it turned out very "soup-like.":( I am definitely going to try Rawkinlocs version! YUMMY!

Silly question...what do you use for the "ala mode"? Is there such a thing as raw ice cream?

I'm following Rawkinlocs' recipe. Hers said to cut up the peaches and add the creamy sauce to them and marinade ovenight, which I'm doing. Also the crumbly topping I have dehydrating to get it crunchy. I snuck a taste of the two and YUM-OH!!! So good. I used apricots instead of peaches or apples. That creamy sauce is really buttery, caramelly-like - really good! Tomorrow's breakfast after my green smoothie is gonna be really a treat!!!

Yes, if you do a search, you'll see a few recipes for raw ice cream. Easy to make too!

I made Rawkinlocs version of this cobbler with unpeeled apricots and it is YUM-OH! I dehydrated the crumb topping overnight - and then marinaded my apricots in the sauce. I am eating some of it right now. It is rich and good and yep, buttery (from what I can remember of the butter taste) tasting!
So, so good!
