my husband is a sushi cheif, and he helped me come up with this. he kno's I'm vegan, and that I'm try'n to eat more whole foods ^^!

*fresh rolls*
dryed nori (seaweed lavar)
soaked brown rice
cucumber, carrot, avacado, zucchini, summer squash, sprouts, lettice, ect.
~
roll as you would normal sushi (using a bamboo mat) and cut, it healthy and great tasting!

*fruit dreams*
kiwifruit
banana
cherry
raw honey
mint
dried chili peppers (flacked)
~
cut kiwi and banana into slices, put on each other in stacks, and pirce the top of the cherry stem into them. make sauce out of the honey and flackes, the pore on top! so good, but not realy sushi ^^! kinda looks like cabobed fruits XD

any more good vegan sushi recipes?

sounds good I eat them that way all they time minus the rice. Cauliflower is a good substitute for too, although I rarely do that one either.

Instead of rice, you can also put parsnips and pine nuts in a food processor, and it makes a fantastic rice.

totally agree, the parsnip pine nut is awesome, if you don't mind a little non raw condiments, adding rice vinegar into that is even more authentic sushi tasting. You don't need a sweetener like in sushi rice because the parsnips are already sweet.
