Has anyone eaten Kudzo?
I have cooked a very long time ago, but I can't remember what it tasted like. I read an article recently that was saying how good it is and how good for you it is. Every part of it is edible. I am anxious to pick me some. I need to find some not close to the railroad tracks because they heavily spray kudzo there.

Assuming you mean "kudzu", I pulled this up:
"The edible parts of the kudzu plant are the blossoms, young sprouts, and early green leaves. Cooked leaves have 36 calories for 3.5 ounces. Leaves can be fixed any way you would prepare spinach."
Sounds like it could be an interesting addition to a salad, for starters... maybe some folks in Georgia can spread the word, so they can rescue their vine-covered buildings by eating through the overgrowth.

Yes I meant Kudzu and yes I live in Georgia. It is available everywhere pretty much.

I used to live there (Rome and Atlanta), and was amazed by how it simply takes over. I actually liked seeing it on the backroads and highways... it felt like Mother Nature was giving the finger to modern society.

I live not too far from Rome.
