View Full Version : Cooling cucumber avo pasta with cucumber water

Our AC in our upper level apartment was busted yesterday so I was really hot but I wanted something of substance to eat so I created this little dish and it was SO good.

Ingredients:
-Chilled cucumber
-Chilled, very ripe avocado
-Mushrooms of your choice
-Chilled cherry or grape tomatoes
-Lemon juice if desired

Grate or spiralize the cucumber to make 'noodles' and let them sit in a bowl so that all the cucumber juice can pool at the bottom of the bowl. Pour out the excess into a glass and with clean hands, squeeze the noodles a little and put back in bowl. Set the cuc juice aside. scoop out and cut the avocado up small and cut up the shrooms. Mix it all up in the bowl like a salad and top with the cherry tomatoes. For your drink. Add some ice cubes and a little water and lemon juice and voila! A cooling treat! The past is very satisfying and an occasional alternative for zucchini noodles.

Yum Oh! Cucumber noodles!

Whole Foods Market had HUGE organic cukes for $1.49 this week and I purchased 4. Can't wait to try cucumber noodles/pasta.

Has anyone else used cucumber noodles? Any sauce recipes for them out there?

It was fun to read your recipe because I make a salad with basically the same ingredients but just prepared differently. I cut the following into small cubes: cucumber, tomatoes, avacado and scallions (and now probably mushrooms). Then I sprinkle some sesame seeds on it and put a little agave over the top and a sprinkle of salt....yum!

I can't wait to get home to try it. I've been on a cucumber and avocado kick lately, so this is right up my alley.
