I had no sun-dried tomatoes but I was craving pasta, so I improvised - I spiral sliced a zucchini and laid it on paper towels to "dry" while I made the sauce.
To make a thick sauce, I used 2 plum tomatoes, half an avocado and a small handful of sunflower seeds. To spice it, I added some oregano, basil, a dash of onion powder and some dried tomato flakes.
I poured that over the "pasta" and mixed some ground up sunflower seeds with salt to make parmesan cheese.
The sauce wasn't red, it was the color of sunflower seeds, but it smelled right, and the texture was thick and filling. And the salt in the "parmesan cheese" made it perfect.
I'll definitely be doing this again!!
