Help! Need a mango salsa and gaspacho recipe please!

Hey everyone! My dad's in surgery now and by the time he gets home he will have had a 24 hour fast. Anyway, he said he watns to eat when he gets home since he'll be allowed to and I want him to be raw for tonight. He's wanting a mango salsa and suggested a gaspacho. I don't have any recipes for them. I would look in Alissa's book, but my mom cleaned up and who knows where it is now. Would using a regular cook book work and modify it?

Yes -- both of of those items are (theoretically) raw. If your dad is just coming home, I would hold off a bit on the spice.

Just make regular salsa of choice, add mangoes and avos....

Here is my mango salsa recipe

Mangos of course

red onions (any onion will do)

Cucumbers

Lime

Chunk you mangos and cucumbers, dice your onions and drizzle your lime all over. YUMMY and SIMPLE!
