Veggie recipes

Does anyone have any recipes that center around vegetables? My dad has planted a vegetable garden and they're blooming. I jsut want some creative ideas to do with them.

Can you be more specific....what veggies ?

coat a selection of vegies in ollive oil and a little sea salt for a few hours.
Then place in the dehydrator for a few hours to soften.
Eat with marinara sauce or chilli sauce.

He has so many! Beets, carrots, green beans, many species of squash, chives, garlic, tomatoes and cucumbers (I know they're fruits lol), peas, loose-leaf lettuce, spinach. Basically you name it, He's got it. Thansk sport. thats a good idea.
