I have heard that parsley root is good for you and since I have turned a wee yellow from all the green juice I have been drinking, I was looking for alternative veggies whilest I lower my green intake a bit.

I was wondering, can parsley root be eaten raw, like a carrot? It looks like a white carrot so i figured yes but I just wanted to be sure there wasnt something I needed to watch out for eating it raw.

Both of those links indicate to cook it. This link says you "can" eat it raw but it is nothing to write home about.

And apparently the reason I've not heard of it is because it's not common in this country.
