I soaked some organic raw almost for about a day (maybe a little more). I rinsed and changed the water faithfully. I then processed them with distilled water and made some almond milk the only other thing I put in it was a small splash of Maple syryp (was totally out of Agave Nectar).
I put it in the fridge over night and I went to shake it and it wouldnt mix up so I opened it up and it was HORRIBLE. It looked like rubber on the top. it came off in one piece and the clearer liquid underneath was like jelly.
Did I make fermented almond yoghurt? BLAG
hehe what in the blazes happened?
Hoping to hear about this one.

Uhhhh, never had that happen. How'd it smell? did you soak in the fridge or on the counter? I never soak longer than 12 hours; mostly 8. I think you killed your almonds. Poor things. :(
Oh! Just re-read your post ~ how old was the Maple syrup? I've had some go bad on me and it gets pretty putrid. Still have some left? Check on that.

WOW, I make almond milk almost every day, and NEVER had this happen, you should go into the Guines book of RAW records. LOL
not laughing AT you though.
Gosh, I just don't know,
this is how I do it.
it doesn't get too hot here though
I take 1 cup of almonds and place in a big bowl, I run these under cool water, until the water runs clear, usually takes about 3 or 4 rinsings, then I fill the bowl with water, probably about 2 quarts of water, and place the bowl on the counter, then I come back in about 4 hours, rinse the almonds, about 3 more times, and soak again, for about 4 hours, then do it again, I let them be at least 12 hours, sometimes as long as 3 days, (but you gotta' rinse alot-- LOL) (that is when I'm too lazy to make milk)
then I place themin the Vita Mix, with about 3 cups fresh water, blap them all up, strain, then put in the fridge, the milk will last up to 3 days, if you do nothing to it, I never add anything to the milk, I will make the milk into milk shakes and such, but I always leave the milk in a container, unadulterated, incase I use it in a sauce or something, then I wouldn't want it to be sweet.
So, I'm not sure what happened, but I would be either your almonds were bad, did you try eating one before you soaked them? after you soaked them? they should taste good and sweet both times, before and after soaking, also have you tasted your maple syrup? I know you said it was new, but that doesn't mean anything, I'd taste it.
so, that is my way of doing it, I'm sure everyone does it there own way, and probably better than my way.
So, please don't give up on almond milk, sometimes, i've gotten a bad batch of almonds, too, where they just smush up and taste horrible, but that is usually when I am buying from a new store, and the almonds are old or rancid, that is why I always taste them before and after soaking.

The nuts were sweet and pleasant and the meal left was fine and the one small glass I drank was great too! I never got ill even in the slightest. I put it directly into the fridge the night before and took it out in the am and it was like this! The maple syup is fine too I tasted it to make sure.
What a Puzzlement!!
Oh please don't feel bad about laughing.. it was totally funny and took me TOTALLY by surprise.
I still think it looked like some kind of cultured process.

I didn't know you could MAKE coconut milk. I thought people just drank the middle of of young coconuts.
I'm interested if you can, because I don't have a place to buy young coconuts.

You can make coconut milk (the stuff in the middle of the coconut is coconut water/juice). To make coconut milk you take the coconut meat and mash it up and strain it. :)
