a long time ago in a place far far away...

ok - so about a year and a half ago and just up the block from where i live... there was a cute little vegan/raw place that i used to go to once in a while (far before i really heard of the raw food lifestyle) called Urban Forage.

now i really liked the food - but the service was beyond terrible. more than once i walked in the door to their 5x12 waiting area to place an order - the ONLY customer - and had to wait for up to 10 minutes while the 2 to 3 people working there finished their conversation and noticed that i was even there! i even walked out once after standing there for over 10 minuteswith no one in that place even noticing that i was there.

well due to some EVIL owners the place is gone - 3 locations here one day and GONE the next with no warning and no final paychecks to the employees!

so anyway - after all that - they had one really really good meal that i have been sort of craving. a Sloppy Joe Wrap.

their take-out menu (which i have saved for inspiration) describes this dish as: A freash collard leaf wrapped around mixed marrinated vegetables, walnut fennel pate and dresses with a tangy tomato sauce.

it was GOOD.

now i have so many raw recipe books - but NOT ONE reciepe for a walnut fennel pate. i can make a "tangy tomato sauce" or BBQ sauce for this - but i really like the pate!

anyone got a recipe that they can share on this?

and thanks for making it this far - i just had a need to write today for some reason.
