I am making potato chips in the dehydrator. I used a box grater and used the part with the big blade on it. This doesn't give me totally uniform slices, but it was the closest thing that I had.

Soaked the slices in cold salted water for about an hour, changing it frequently. Then a brief soak in water with a touch of vinegar.

Transfered them to a sieve and rinsed them well in the sink with plenty of cold water. Added a bit more salt (perhaps a bit too much) and put them in a single layer in the dehydrator at 145 to turn into chips.

I just checked them, knowing they would not be done yet. Some of the thinnest, tiniest pieces were beginning to crisp up. But the larger, thicker pieces were soft and warm. So I tasted one of these. It was yummy! Super yummy! Lost that starchy, raw potato taste and reminded me of real mashed potatoes.

I'll bet a plate of these partially dehydrated potatoes, perhaps drizzled with a bit of olive oil and sprinkled with black pepper and parsley would be wonderful!!!! I think they've been in the dehydrator for about 1/2 an hour. Of course if you were going to eat them like this, you'd have to keep a close eye on them. Because there will probably be a stage between now and chips that would be unpleasant. But I am glad to have made this discovery! My daughter just loves potatoes so this will be a new way to fix them for her.

These sound SO GOOD!!! one of my biggest weaknesses to beat was SAD fries. I'm so glad you discovered this :D

That is one food I do actually miss but I know that I will be fine without them. I want to try some sweet potato chips so I will follow your lead with the cleaning soaking etc...
isn't that temp a bit high? just curious :)

This is the temp. recommended by RP to make the chips. We both live in the Pacific Northwest and from what I've read in other posts, we sometimes have to use a higher temp. here than in other areas because of our moist air.

And while I did like the partially dehydrated potatoes, my daughter did not. I also didn't like the chips when they were eventually done. Oddly, they had that raw, starchy potato taste that I don't like after they cooled. They were fine eaten warm though. And they were bettter before I tossed them in olive oil. The olive oil didn't coat them evenly, leaving greasy spots.

So next time I'm make far fewer of them. One large potato makes a TON of chips! I'll make just enough to eat right then and there and I'll eat them warm. I might also try putting a touch of olive oil on them before I put them in the dehydrator.
