Does anyone know what to do with burdock root? I bought some because I saw a raw recipe for meatballs but now I can't find it.

When it's fresh enough it is crunchy like a carrot, so I eat it just like I would a carrot without anything else.

I use it in salads. According to David Wolfe, in Eating for Beauty, burdock root is used to alleviate skin conditions such as rashes and acne. He claims that according to Ayurvedic medicine, when ingested, it is a great skin cleanser and blood purifier. He also said to get used to the taste you might want to start by including it in juices. It has a different taste but I didn't have any trouble getting used to it. I tried it once in a green smoothie and that was NOT good. I enjoy the taste in my salads.
