when making bananna ice cream? I don't understand why one would need an ice cream maker when they have a food processor?

No need to use one for banana ice cream since the bananas are pre frozen. People tend to use them to freeze nut milk or coconut milk based ice cream.

From what I learned, an ice cream maker is handy because ice cream (if it is to be stored in the freezer and not have those pesky ice crystals in it and stay soft (yet firm) enough to scoop out rather than a frozen ice block) needs to be constantly stirred/churned as it's freezing so it can get air into it or something to that effect.

If one is just gonna make ice cream and have no plans of saving any for later, then you're right, an ice cream maker isn't really needed. But if someone wanted the more scoopable texture rather than soft-serve texture and especially if they want it to be stored well in the freezer.

But as I mentioned in another thread, you can still make the ice cream, freeze it, warm the outside of the container to remove it easier (or just pour into ice trays) and then re-process it and re-freeze it. If you do that process once or twice the ice cream ends up no longer being this rock-hard block that you can't scoop without thawing and it doesn't have the ice crystals either. I got that tip from Juliebove here on the forum and it works great.

As for how the ice cream maker works with banana ice cream, you would just blend your bananas (and any other ingredients you want to add such as vanilla or carob, etc.) but you want the mixture to be more in a liquified state. The manufacturers instructions should tell you the consistency the mixture should be, so just blend your bananas until that consistency.

Would Almond Milk, vanilla and dates blended and put into an ice cream maker- actually become creamy enough. This thread got me thinking about dragging my ice cream maker out of the garage ;)

Here are a few pics I took of chocolate ice cream I made last weekend:

Pic 1 - The frozen banana/cashew ice cream chunks that were nowhere near scoopable.

Pic 2 - The frozen chunks after being processed with some cocoa powder

Pic 3 - The finished ice cream after the second processing and being frozen again. Firmer than the soft-serve, but still scoopable and no crystals!! :D

Depends on your ice cream maker I think. Mine sucks big time, but if you have a good one, it probably would. But what I'D do is make the almond milk more of a cream by adding less water than you would for the milk.

Thanks Rawkinlocs, you always have the right solutions. You should publish a book about raw recipe solutions, lol, as so many of us run into problems with these recipes.

Actually, I have tried something very similar with my ice cream maker and it worked fine, it isn't as creamy as regular ice cream, unless you add more fat, or guar gum or something to change the texture, but I loved it, and still make my ice cream with almond milk and sweetener etc. I do add some cacao butter to the mix, it makes it devine, or you could add coconut butter if you like too. it depends on the flavor you are after.

but I do like it with a little more oil added in. (oh, pinenuts, mac nuts or brazil nuts made into milk might work too,haven't tried that one yet.)

Hey everyone.... Okay regarding my trying to make the Ice Cream this morning....-

3 cups soaked almonds
1 1/2 cups filtered water
dash of sea salt
1 tsp vanilla
2 Tbsp+ Agave Nectar
4-6 frozen bananas
Cinnamon and Nutmeg
YUMMY! :D

Blended in the vitamix....Good base flavor...but did not have time to strain so I left it kind of grainy.....then added 4-6 frozen bananas- threw it all in....tasting better I thought I would add some cinnamon and nutmeg- WOW!

It taste exactly like Egg Nog!!!! So, I am Freezing in a dish now and will re-process it later when completely frozen and have for dessert tonight!Should I top with a cocao and Agave sauce?

that sounds like a great recipie, actually ALL of the recipies/ideas are super great

I would say yes, top it with agave, yum!
