Hi everyone,
I hope I can say this clearly :D I'm wanting to find Raw Food Higher Eduction Options and not quite sure what to look for. I can get a BS in Nutrition from our local university, but I don't want my entire education to be structured around SAD food pyramids and the like. I need to delve into their course curriculum to see what exactly they teach, but I'm looking for other options, too--preferably local or distance learning since we can't up and move anywhere.
I want to learn what all the different foods do to our bodies--about flavonoids, antioxidants, which foods prevent certain cancers, which foods help detox different organs and why. I want to know why onions help detox and why blueberries are a good antioxidant. I'm looking for deeper knowledge of why--not just that blueberries ARE an antioxidant, but WHY, what happens at the cellular level. I want to be a walking raw food knowledge base--and then be working somewhere (or for myself) sharing that with others.
All suggestions welcome for 1) education (traditional or non-traditional) 2) books that would help 3) employment and self-employment career options to help turn the world raw :)
I know I don't need to know how antioxidants work to help others with a raw life, but that's the kind of stuff I'm wanting to learn AND I want to be working somewhere, somehow to help others AND help support my own raw lifestyle.
