This was absolutely awesome!!!
This recipe sounds quite complex, but it's really not. I had soaked the eggplant for Alissa's eggplant 'pasta' dish and didn't have time to make it. So I just put them in to dry and they dried really fast (much faster than most things would). Mid afternoon I decided we needed something for dinner and threw in the burgers (about 4 minutes to make). The goji sauce was a last minute inspiration and the chopped veggies all easy too.
The result was MAGIC!!!
Bun:
* Slice lengthwise big slices of eggplant
* Let sit for a couple of hours in a bowl of salt water (I put another glass bowl on top to hold them underwater - and forgot them overnight)
* Dehydrate overnight until crispy (they shrink alot)
** The eggplant being used as the bun was so incredibly tasty! It goes very crispy but softens a little when high water foods are placed on it I will make these often for crackers too.
Burger (sorry I didn't measure):
* 1/2 carrots
* 1/2 cashews
* Dill
* Onion
* Garlic
* This was modelled after the Boutenko burger recipe. You know you've got the %'s right when you just want to eat it raw.
Form into birger shapes and dehydrate until it's holding together in a birger shape, or overnight if you want a fully formed burger. Last time I only left it about 5 hours.
Ketchup / Tomato Sauce
Normally I would do tomato, sun dried tomato and galic/onion/chili. We didn't have any sun dried tomato though. So I used GOJI BERRIES!!!!
* Tomato
* Garlic
* Chili
* Goji Berries
Blend until smooth - look for highly seasoned since this is your sauce!
The goji berries were a little sweet, but I offset this with lots of chili. You can also use sun dried tomatoes if you have them. There was something really nice and different about the goji berries though.
To assemble (suggested only - use your favourite ingredients):
* Lay out a nice solid piece of dried eggplant
* Put on some mashed avocado
* Ketchup
* Burger
* Sliced red onion
* Chopped olives
* Slice of tomato
* Lettuce
* Another piece of dried eggplant
Wrap your hands around it and eat!!!
