I was wondering if the calories from when you make almond milk go in the milk or the pulp or both like I said? And where does the fat go?
Any answers?
Thank you!

My guess, mostly in the milk. As you blend it and the fats and such are released. To me the pulp seems more like fibre!

I believe the milk, as it has the fat in it.

I don't know, but I don't strain my milks (the few times I make them)...it tastes good to me and I don't mind them not being strained. have you tried them both ways?

Yes, probably a teenie bit of everything is still left in the pulp but it's probably so minimal that it's no big deal to just consider the pulp simply fiber. At least this is how I consider it... flavored fiber. :D
You will probably notice that with nutmilk (especially if you don't use lecithin), sometimes you have to shake or blend it back up after it's been sitting in the fridge awhile because the fat will separate from the rest of the milk.
Mmmm... feel like making me some brazil nut milk now!

So is the protein in the milk then?
I haven't tried brazil nut milk, but maybe I should sense there's such a big rave about it! And I think I might have tried almond milk with the pulp, I guess it might remind me of a Amozocke (I have no idea how to spell that, it some kind of rice shake in health food stores) or something.
Thank you all!

Yes, everything is in the milk 'cept for the fiber.
The brazil nut milk that I absolutely love is in the book Raw Food Real World. It's the Vanilla Brazil Nut milk that has coconut oil in it. It's divine. The vanilla and the coconut flavor merged with the brazil nut milk makes me melt!

Hee Hee! I was just thinking that if the fat separates in nut milk, you could skim it off and make butter! (Joke)
If the pulp doesn't have much fat and calories left and it is mostly in the milk, then using that pulp in recipes would make it a low calorie dish - or lower calorie anyway.
I was wondering: Are the proportions of nuts and water about the same for all nuts in making milk?

I have found that to be the case so far, but I am sure I have a few more nuts to try.

Thank you for all the replies!
I'm guessing almond milk has the most protein, right?
