View Full Version : Do you peel your organic carrots?

I always buy organic carrots and I have been peeling them before eating them...do you peel yours or eat the skin? I'd rather eat the skin too...thoughts?

My mom used to peel carrots until she heard that the viscus ring (that contains the most vitamins and enzymes) is right below the skin and that ring gets peeled off if you uh, peel them lol. She now scrapse them pretty well and still keeps the peel on, but the dirt and VERY top thin layer is removed.
Funny story: my mom used to peel the carrots and give them to my sister. Once she heard about the viscus ring she scrubbed them and gave it to my sister for dinner (she was about 5). My sister didn't like them and my mom told her that she scrubbed instead of peeled because they have more vitamins that way. My sister asked if next time she could have the carrots and leave off the vitamins. :D It's better when my mom says it in person lol.

Not usually. I scrub them well with a brush. That's usually enough. If I find they are particularly dirty and the brush isn't enough, then I will peel them. But I rarely have to do that.

If they have been around for a while and do not look attractive I will either juice them or make carrot and ginger flax crackers but I will not peel them.
