Sprouted wheat berries = taste sour?

I sprouted some wheat berries and made the apple currant muffins and am attempting the fig squares. The muffins seem to have a sour taste to them which I'm attributing to the wheat berries. Are sprouted wheat berries supposed to have a sour taste? Did I let them sprout too long? What has your experience been with wheat berries?

It could be because you sprouted them too long, thus fermentation.
