I have been very curious about the nut butters and tahini so I emailed artisana and the man emailed me back and said the threshold for the heating process is 118 and most of the time it is 112. I know there has been much speculation over this so I looked a little further.
I also read something from Sheryl on this forum a link she sent me about raw cashews. The article states that the nut is not damaged in the heat process. the shell is so thick.
