View Full Version : "Leftover" Salad

I have been hesitant to experiment, as my first was a real bomb. Today I cleaned my fridge and noticed I had some mushrooms, red bell peppers, and green beans that weren't going to be edible much longer. My thought was apple cider vinegar would prolong their fridge life, so I cut them all up and put them in a bowl. Then I came on here cruising for a "3 bean salad" style dressing to put on it. I found an italian style with mustard that I added. It is really yummy, my "sad" friends liked it a lot.

This is the dressing I used: Italian Dressing

1/2 cup Extra Virgin Olive oil
1/4 cup apple cider vinegar
1 cloves garlic
1 teaspoon whole grain mustard (optional)
1/2 cup distilled water
1 green onion
1 teaspoon honey (or maple syrup)
dash cayenne to taste
Place all of the above ingredients in a blender and blend until smooth. Then stir in:
2 teaspoons Italian seasoning (or 1 teaspoon oregano & 1/2 teaspoon basil)Refrigerate till used.


I found it posted by "kirk" in Sept last year, there are lots of dressings listed if you are interested.

I am kinda pleased with the results, I let it sit in the fridge for several hours before I ate it. After 2 weeks on this diet, I am excited that I am finally getting brave enough to experiment ;)

Thanks for sharing- I too love to try different dressings. I have been stuck on Alissa's honey mustard for the longest time! I will try this-
