What to do, if anything, with the tops of beets? I bought a bunch of beets -- wow, how's that for alliteration? -- today and I read that the tops of veggies are more nutritious than the root veggies themselves. Should I use them in smoothies? I am sort of afraid to just tear off a leaf and try it.

Suggestions are greatly appreciated!

I use them in juice and smoothies and also mixed in with the greens in my salad

Smaller leaves in salads, larger leaves plus those wonderful red stems in smoothies. That's how I use them.

For the longest time, I'd eat the tops and my DH would eat the roots. Then he started making smoothies with the raw roots, and WOW they are great!

But I always buy beets with the most and healthiest looking tops!

beat greens, radish greens, etc are all delicious, the better the tops look, the fresher they are (usually), we grow our own, and eat these in salads all the time, you can just keep picking and eating for a long time, off of one plant.
