Alissa's Mock Turkey Loaf Question

I've got everything to make this except the sage. I do, however, have poultry seasoning. Has anyone else out there ever made this substitution? How did it turn out? Thanks!

I *think* I've done that before but I believe it should be fine anyway because poultry seasoning does have some sage in it. Maybe add a little more of it (poultry seasoning) to taste.

I ended up adding extra poultry seasoning, salt, nutritional yeast, and lemon juice, making patties and dehydrating. Not great, but not too bad, either!
