View Full Version : Stuffed mushrooms - I think I know where I went wrong!

I've made Alissa's pesto mushrooms a couple of times and the filling was great. the mushrooms, even though small, sadly were not that good because they were just really dry and tasteless. They also didn't change colour like I was led to believe they would as they dehydrated.
I noticed in a recent thread by Maraw, she says to brush the mushrooms (in her recipe) with oil before dehydrating so I hope this will solve my problem as I'm going to try again today.
This site is just so good for exchanging ideas - I'm so dumb that i didn't think of the oil!!

Hi Tracy,
I don't brush the mushrooms with oil, but I DO leave them in the dehydrator for a REALLY long time. After all day in there, they soften and brown and taste as though they have been cooked.

Yeah, I don't brush my "pesto" mushrooms either. The oil from the mixture soaks through them and thats what softens and darkens them up. I usually leave mine in while I am at work!

I've just had a quick look at the mushrooms after a couple of hours in the dehydrator. They are darkening so will check on them later. I actually put olive oil with some apple cider vinegar and brushed that mixture on for a bit of extra flavour.
I have left them longer in there but they ended up like bullets so that didn't work for me! Perhaps I''m not putting enough oil in the pesto mix although I did follow the recipe.

Tracy-Pesto Stuffed Mushrooms are a fav recipe of mine. I find they are brown the NEXT day-I think it's due to the olive oil soaking in.
I do not use as much oil as the recipes suggests-but they always turn out great. Just keep them in the dehydrater for 5-6 hours-or if you are like DH & I- you will be sneaking them every few minutes...LOL :D

Well, my mushrooms dehydrated for 6 1/2 hours and were then demolished very quickly by dh and me!! They were really yummy having been brushed with the oil and apple cider vinegar mix.
I think the button mushrooms I use are not very absorbent from the inside as they don't seem to get soft from the oil in the pesto mix. It just seems to sit there!
I''ll try some different mushroom varieties until I hit on the best one!

those pesto stuffed mushrooms are SOOOOOOOOOO good, everyone LOVES them.
We grow about 20 basil plants each summer, just to make those little guys, then we freeze them, for the winter, can't get enough of those, I also chop them up or slice them and toss them on top of pizza and spaghetti, and on top of my rawviolies, mmmmmm with marinara sauce,double mmmmmmmmmmmmm
I love those little guys, maybe I'll have some for dinner. mmmmmmmmmm

I Marinate Them In Olive Oil, Garlic And Nama Shoyu And Sea Salt
For About 3o Mins, Then I Put In The Pesto...then Dehydrt. Excellent!!!!!!

I found a different recipe! And the longer you dehydrat, the better they are!
1/3 cup pinenuts
3 cloves of garlic
1/3 c fresh cilantro
1/3 c fresh basil
1 t lemon juice
1 c tomato
2 tspn Bragg's or shoyu
Put all in fd processor except tomatos and puulse a few times
Add tomatoes then pulse, stuff mushrooms!
Much better to me then, the walnut & olive oil recipe! Very good!
