I got a bunch of beets from my CSA, attached to some very leafy greens.
Has anyone eaten these raw? In a smoothie maybe?

I've had some in a green salad, but I don't like a lot of them. Just a few mixed in with other greens. That's one thing I don't like about beets. I don't eat much of the tops. Seems such a waste to throw them out but I just prefer the beet bottoms.
I've had beet tops in smoothies with no ill effects. Mike Snyder (TheRawDiet.com and a contributor to this board) eats them, too. Generally, the greens of root vegetables are far more nutritious than the roots/tubors themselves. Actually, Victoria Boutenko discusses this very fact in 'Green For Life'

I was wondering about this the other day as well. While I was contemplating this in the store I saw a women come up in front of me and look at the bunch of beets. She then looked around, ripped the greens off the beets and put the beets in her carriage. It just surprised me, and I thought about how she was throwing away half of what she is paying for...not to mention the most nutritios half!

I love beets. I usually juice them and dilute with some other juice (Its WAY too potent alone). Sometimes i chop them up and put them in my salad... Never been able to eat them whole though. Beet Juice has AMAZING results though...

Smiley, that's great! what results have you seen? I'm thinking of planting some beets (mostly for their greens ^_^). I don't have a juicer...do you think they would taste ok in a green smoothie?

Beets are well-known for cleansing the blood and boy does it work! My face used to be like really red... and now its not nearly as red. Looads of beta-carotene so that has to be good for the eyes. Its very good for the liver. Im always hearing stories about how beet juice has cured cancers and such.... teh improvement I saw biggest was in my circulation.

Beet greens are a WONDERFUL addition to my daily diet (when I can get them and they look fresh and healthy!)
I'm a smoothie gal, and 4 cups beet greens per smoothie are the way I go! Also great in salads (the little leaves, not so much the big ones). And yeah, I've juiced the stems, although when I'm feeling the need for something salty, I just munch them.
BTW, raw beets in smoothies are unbelievably terrific!
