Hi!
I have been admiring your stuffed mushrooms in the food photos post for a while and I have also been trying to recreate them with no luck! I am wanting something with that bread-crumby texture and so far I can't figure it out. I was wondering if you couold give a hint as to what you stuffed your with. I have tried about 3 different ways and each time they are less than desirable! Thanks in advance!

I'm happy to share the recipe with you. And I'm posting the picture for the benefit of others, so they'll know the one we are talking about.
I hope you like these as much as I do. They really do remind of the old SAD kind, only better.
Stuffed Mushrooms Caps
1/2 C Brazil Nuts
1/2 C Macadamia Nuts
1/2 C Pecans
1/4 C unsweetened shredded dried coconut
2 green onions
1 large fresh shitake mushroom
1/2 tsp. garlic
1 T lemon juice
4 T parsley
3 sun-dried tomato, rehydrated
1/3 red bell pepper
1/2 tsp. Herbamere seasoning
1 tsp. Herbs of Provence
16 large white mushrooms
olive oil for brushing mushrooms
De-stem and clean mushrooms, generously brush with olive oil and set to one side. Process nuts and coconut together until very light and almost fluffy - be careful not to over-process and begin making nut butter. Add all other ingredients and pulse chop until blended well. Stuff mushrooms and place on mesh dehydrator screen. Dehydrate at 115 degrees for about 2 hours.
