View Full Version : Corn salad w/o nightshades?

The corn salad I made is yummy, but my mom can't eat any nightshades. She has bad athritis and those things affect her. So no tomatoes or peppers. And some people in my family are not partial to onions. Does anyone have a recipe for a corn salad that doesn't contain these things? I suppose another option would be to use grape or cherry tomatoes left whole, so my mom could avoid those. But I was thinking this would be a good thing to make for the 4th of July.

This one is easy and delicious.

MANGO, JICAMA, AND CORN SALAD

6 ears fresh corn
6 small mangoes, peeled, pitted, coarsely chopped
2 pounds jicama, peeled, chopped
1 cup chopped red onion
1/2 cup fresh chopped cilantro
1/2 cup fresh lime juice

Cut off enough kernels to measure 4 cups (original recipe calls for cooked corn). Place corn in medium bowl. Add mangoes, jicama, red onion, cilantro and lime juice. Toss to combine. Season to taste with salt and pepper. Cover and refrigerate until cold. (Can be prepared 3 hours ahead. Keep refrigerated.) Serve cold.

Serves 8.

You can always try some avocado and onions or green onions with your corn.

The only person in the family who eats avocado is my mom. She and my dad both turned their noses up when I mentioned raw corn. So... I'm just going to make the salad like I did with the tomatoes and peppers, but not make a lot of it. I suspect nobody else will even try it when they learn that the corn is raw. This strikes me as really odd because they eat other vegetables raw. *sigh*

It sounds like you gave up the search for a corn salad w/o nightshades, Julie, but just in case I thought I'd post this one I just came across on the Foodnetwork website. Looks pretty good.

Latin Cabbage and Corn Salad
Recipe courtesy Dave Lieberman

When you get tired of eating leafy greens, this Latin-style salad is a really nice option. It's my roommate Alex's favorite!

For the dressing:
2 limes, juiced
1/4 cup red wine vinegar
1 teaspoon salt
20 grinds fresh black pepper
1/3 cup extra-virgin olive oil

For the salad:
1 small head green cabbage, trimmed, cored, and shredded
1/2 small head red cabbage, trimmed, cored, and shredded
1 (15-ounce) can corn kernels
1 bunch fresh cilantro, washed, dried, and finely chopped
1 bunch scallions, washed, dried, and thinly sliced into rounds

Make the dressing by whisking all the ingredients together in a small bowl. Toss all the salad ingredients together in a large mixing bowl.
Just before serving, toss the salad with the dressing. Keep refrigerated and covered until ready to use.

I didn't exactly give up. I just made my recipe using grape tomatoes and cutting the peppers up in large pieces so my mom could pick around them. The salad went over like a lead balloon. Nobody liked the raw corn but me. The others thought it was either disgusting or too sweet. *sigh* As for the red wine vinegar, I don't think it's considered raw.

That's too bad, but at least you enjoyed your salad! Unfortunately, I think the idea of raw is the problem for many SAD people, more than the actual taste, which is so often better than cooked (raw corn being a case in point).

I don't know whether you can find raw red wine vinegar or not. Although I don't actually use it myself, I personally am not terribly concerned; I'm one of those who will use maple syrup, "raw" cashews that are not really raw, oat groats, frozen corn, etc. when necessary. I should imagine, however, that you could substitute something else for it, or just use more lime.

Oh, and the corn, of course, should be raw, not canned!

You could tell by looking at it that it wasn't cooked.
