Hey all! :)

just wonderin'.....for those of you who eat bok choi, what are some of the different ways to have it? anyone have any salad or other recipes with bok choi in it? also,has anyone had it in a green smoothie? Please post your various recipes and also state how good it was in your opinion.

One of my favorite salads is Marinated Bok Choy from the Complete Book of Raw. The marinade is:

1 lime juiced
1 lemon juiced
4-5 dates (medjool), pitted
1 T. ginger
3 T. nama shoyu
1/2 c. olive oil

Blend until completely smooth in a Vita Mix. Toss the bok choy with the marinade and let it sit for about 5 minutes until it gets creamy.

I LOVE THIS DISH!!!!

I put it in dehydrator "stir fry", marinate and dehydrate with other veggies and then season. I also just munch on it on occasion.

Kimchi version

cut. rinse shake off water

Lay on them plate sprinkle w/ sea salt let sit for awhile to wilt them slightly

In a jar (that has a lid) put diced hot peppers ( I use dried flakes)
Crushed garlic cloves
carrots ( juli)
Scallions/green onions
fresh ginger
water to cover

Rinse Bok Choy and squeeze off the water put in jar and shake, fill to top w water. Leave for a few hours better the next day. ( I shake the jar every couple of hours whenever I think about it)

I just made a boc choy salad for lunch today. It was really good. I love the combination of the apple with the bok choy and the carrot gives it a nice color. You could substitute red onion for the carrot if you like.

2-3 stalks bok choy chopped
1 Granny Smith apple chopped
1 carrot grated

I made up a dressing with honey, apple cider vinegar, olive oil, a little salt and some spices and mixed it all up. Yum!
