I made Allisa's recipe for mozzarella to use in an eggplant lasagna I threw together (ended up very yummy). Now, I have a lot leftover. What can I do with it? Thanks!

You can dehydrate it into "slices"...spread it out thinly and when dry, cut or break apart and eat on crackers, in salads, etc.

What about mixing with fresh pineapple, crushed and completely drained ( save juice for something else) and maybe some pecans or walnuts and making some sort of cheese ball. You could probably use a cashew powder to give the mixture a bit more firmness.
I hadn't looked at the recipe yet, but could you season the cheese and add to some sort of raw pie shell with veggies and make a quiche that you can store and save for later?

What about pouring it over bell pepper that's been stuffed with mushrooms, sliced tomatoe and sprouted rice.
These foods should freeze ok and then easily warm in the dehydrator

I have also dehydrated my cheese recipes & then sliced & frozen. They come out great & are so handy for any uses.
I like the cheese ball idea & the quiche...YUM....
I just whipped up a batch of Alissa's nacho cheese this morning for company. They could not believe what I made the cheese dip out of as they watched... & they LOVED it !!! I am sending them home with samples. :D
