View Full Version : What to put on a Portabello...

Since the question came up in another thread (about burgers), here are two of my favorite portabello toppings:

1) Mash an avocado with a fresh sqeeze of lemon juice, salt, and a few grinds of pepper. Spread it on the portabello, top with sprouts (onion or radish are really good) and enjoy! It's so quick and really delicious. If you want, you could also add a slice of tomato or onion (if you're not using onion sprouts).

2) Spread some home made raw seed cheese on the 'shroom, and top with tomato, salt, pepper, and sprouts...enjoy!

I NEVER get tired of these, and they fill me up when a simple salad, smoothie, or raw soup seems too "light" on those hungrier days....

I lover fresh lemon juice, and almond butter with slices of tomatoe and white onion on a portabello cap, yummy

They're great stuffed with guacamole. I also love them sliced and marinated then tossed into a salad.

Earlier today, I tried a plain cap with the avocado/lemon(i used lime)/salt/pepper then added onion on top. It was ok.

Then tonight, I took another cap, put olive oil & bragg's on it, and stuck it in the dehydrator for like 2 hours. Then made the avocado mix again, put it on top, and cut up onions. It was really good! I just don't like the thickest part of the mushroom where it's just kind of spongey. :(

Speaking of...how do you folks prepare your portabellas?

I peel the top layer of brown "skin" off the cap, to where it's all white on the top; and I use my finger and brush off lots of the little black fin/feather things on the underside, under running water. Then try to dry off as much of the cap as I can before doing whatever I'm doing with it.

I've always done this, even when I ate them cooked (mmm...with garlic & A1 sauce.)

Ooh..thats what I need a recipe for, a1! I could eat that stuff alone! My mom even put a bottle in my christmas stocking one year cuz I liked it so much. :D

I "prepare" my potabellos by taking them out of the bag they're in :)

Honestly, I love them so much that I'd eat 'em with the dirt still on 'em...except they're grown in.....compost :)

Lol! I wonder if the taste changes. The little almost-furry brown skin kind of creeps me out.
