Does anyone have a good recipe to use for wild rice. Its sprouted (took 2 days) and its a lil hard. Maybe it could be ground up and used as flour for something.

After soaking wild rice, I love to throw in some kind of dressing (usually olive oil, lemong juice, salt, garlic), chopped up celery, carrots, fresh pineapple, parsley, perhaps some walnuts, etcc... It makes a great salad!

I usually have to soak it for 3 days before it's soft enough to eat. Was yours chewy?

It was different types of wild rice. One some of the rice opened up.
It sprouted in about 2 days and it was hard. I ended up grinding it
and giving it to my dogs.

Sabrina I havn't tried this one yet, I just bought the rice today. I'm going to make it though, it sounds good.
Wild Live Undressing
2 garlic cloves, chopped fine
1 cup brazil nuts, washed, soaked for 2 hours and drained
1/4 cup nama shoyu
2 tablespoons fresh rosemary
2 tablespoons fresh sage, chopped fine
sea salt to taste
2 tablespoons miso
2 cups wild rice, washed,soaked for 12 to 48 hours and drained
1 onion, chopped fine
3 stalks clery, chopped fine
1/2 cup fresh cranberries, for garnish
Place the garlic in the food processor and process well. Add the Brazil nuts and process to a rice like texture.
Add the nama shoyu, rosemary, sage, sea salt, and miso, and blend well. Transfer the mixture to a bowl and add the wild rice, onions, and celery. Stir well, and garnish with the fresh cranberries.

I have Juliano's Raw Uncook book and he has 2 really good wild rice recipes in it. The first on is a 'Fried' Rice and the second one is a Stir 'Fry'. I have to make huge batches of the 'Fried' Rice once a week for my girlfriend to last all week. :rolleyes: She loves it. I'll post the recipes when I get home. Don't have it memorized yet.

Fried Rice
1c red bell pepper, chopped
1c sliced carrots
1/2c chopped green onions
1/2c red beets, julienne
1/4c purple cabbage, sliced thin
1/2c peas
1/2c yam, julienne
1c water chestnuts, peeled & chopped
1c sprouted rice
1/2c sprouted wheat berries (optional)
1 tblspn minced ginger
1 tblspn minced garlic
1 tspn minced jalapeno
1/4c Nama Shoyu
1/4c lemon juice
1/2c olive oil
2 tspn grated orange rind
combine all except orange rind in serving bowl & mix. sprinkle orange rind on top.
I use this as a guide line and not an exact recipe. Sometimes I add tomatoes, usually don't use the wheat berries or water chestnuts.

Stir Fry
1c shiitake mushrooms, chopped
1/2c Nama Shoyu for soaking mushrooms
1/4c ginger, peeled paper thin with vegetable peeler
1/4c apple cider vinegar for soaking ginger
1c daikon
1/2c zucchini
1 tblspn apple cider vinegar
2 tblspn Nama Shoyu
1c olive oil
1/3c orange juice
1/3c lemon juice
1 tblspn white wine
1c bok choy, chopped
1c red bell pepper, diced
1c carrots, sliced
1c broccoli, chopped
1/2c green onions, chopped
1/2c shallots, chopped
1/2c red beets, julienne
1/2c yam, julienne
1/2c pepper cress, chopped
1/2c water chestnuts, peeled & chopped
1/4c cashews, chopped
1/2c green beans
1/4c fresh parsley, chopped
1/4c purple cabbage, sliced thin
1/4c sprouted rice
1 tblspn minced ginger
1 tblspn minced garlic
1 tblspn minced jalapeno
Soak shiitake or other mushrooms in Nama Shoyu for 10 min to 1 day. Drain & set aside. Soak ginger in apple cider vinegar for 1 hr to 1 year. Drain. With a potato peeler, shave daikon & zucchini lengthwise into long, thin strips to soft & seedy center, slice remaining portion into long strips. In serving bowl combine all ingredients & mix.
Again I only use this as a guideline and do not follow it exactly.
