Malt Vinegar

I confess to being ignorant about vinegar and the different types. I am trying to find a salad dressing I like and think vinegar and oil with herbs is probably my best bet. What's the scoop on vinegar and raw?

According to Alissa's book the only vinegar you should use is apple cider.

I really like the ACV. Some wine vinegars are also raw too, so it's nice to have a little variety. Lemon juice, lime juice, orange juice also work well in certain types of dressings.
