View Full Version : any suggestions for mustard greens?

I got this HUGE amount of mustard greens from the organic farm we belong to. They are EXTREMELY SPICY, so I won't put them in a smoothie. Anyone have any suggestions? Anyone eaten these raw before in any kind of quantity?

Would doing the marinated greens recipe work for mustards? Maybe also shred or slice into really thin ribbons and add to salads (?) I've not had mustards since eating cooked greens and kinda didn't like them then...but haven't tried them raw.

The chef at Hippocrates makes a great salad with mustard greens in a creamy sort of sweet almond based dressing.

I love mustard greens and eat them everyday in my salads. They keep well in a tupperware container. They are spicy with a definite mustard/horeradishy flavor. I do agree that they might be overpowering in a green smoothie. I haven't seen any raw food recipes for them other than in a fresh salad.

YEP, we grow them and eat them every day, they are exceptionally nice in a salad, or a sandwich instead of mustard. I use them as my lettuce and mustard on my burgers frequently, they add that great spicy tangy zip to the food.
I also use them in recipes that I want to be hotter, such as meat loaf and stuff like that, yummy.
they are very pretty too, all varigated deep reddish purple and green, we also eat the flowers in salads, soooooo very nice and pretty.
