When I first cut out cooked foods a little over a year ago, I tried sprouting wheat berries one time- hated them- never tried it again. Yesterday, I soaked (and slightly sprouted) buckwheat- then dehydrated those little crunchy "pyramids" to make what has to be one of the most versatile snacking tools ever! I have fallen in love! They are just like crisped rice. I have had them in coconut yogurt, with almond milk, mixed with a dab of agave and almond butter, mixed also with rejuvenative foods "honey-flax hempini." My 2 year old daughter loves them as well and they will make for a very easy "on the go" snack. I know most of you are not new to buckwheat and/or sprouting in general, but if you've been holding off as I have for way too long- try it!

I also love sprouted/dehydrated buckwheat. I make granola with it.

I love sprouted buckwheat. I dehydrate it and toss it in salads, I make granola, and raw cereal. Sometimes I just sprout it and don't dehydrate it and then either eat it with nut milk and some cinnamon and stevia, or I blend it in the food processor with some cinnamon, honey, stevia, whatever you like. It has the texture of hot cereal.

Hi there,

I have celiac (cannot eat gluten = wheat) and your posts about buckwheat are very helpful since buckwheat is actually not wheat but a fruit. If anyone has any other recipes to share, I'd love it!

Best,

Anne ;)

I am really not a huge fan of wheatberries either, but buckwheat is delicious - either only soaked overnight and eaten with fruits or as granola prepared in the dehydrator with dried fruit, chopped nuts and some cinammon. Delish!

I really like making the Buckwheat Maple Cinnamon Crispies from Raw Food/Real World (I'm always bringing up that book...haha)

They're really crunchy and meant to be eaten as a cereal but I usually just eat them plain. Very tasty!

Here's a great little treat with buckwheat... Carob Crunch Balls!! And guess what gives it the CRUNCH, you guessed it! Buckwheat!

Just blend together soaked dates, almond butter, soaked walnuts and mix in the sprouted and dehydrated buckwheat-- form into balls and freeze for a delicious treat! I had about 6 of them today and even my non-raw picky husband liked them!

Help! I tried sprouting buckwheat, again, and all it does is get slimy! What am I doing wrong? They are raw buckwheat groats from Whole Foods (from the bulk section).

My wheat berries from same store are doing fantastically, I got sprouts comin' out of my ears. But the darn buckwheat. GRRRRRRRRR!

Thanks!

I too have celiac so would love some recipes. Would you please share your coconut yougurt recipe?
Does the buckwheat need to be hulled? That's the only kind I saw at Whole Foods. Now I can't wait to get back to WF, dh will be thrilled. ;)

Thanks so much!

Hi SeaRose -

yes, they are a bit slimy. Just keep rinsing and they should sprout in a day or two.

Two more questions:

What temp do you dehydrate them on and for how long?

Thanks!

I did this too last night. I made three batches. One I put a little sea salt on. One I put agave and cinnamon and the last batch I put some Bragg's (can't use wheat based soy sauces), cumin, chili powder, garlic and onion powder.

My kids love them! What a great thing to take when you travel or to have in the car for a snack.

mrsalf97,
coconut yogurt: blend well the meat of one young coconut, it's water, 1 tbsp. coconut oil and the juice of one lemon- it tastes exactly like yogurt-- and if you want to ferment it, you can...though it tastes great as is.
after sprouting, i dehydrated the buckwheat overnight (it probably didn't take near that long until they were crunchy- my guess would be 2-3 hours) at 115 degrees.
enjoy!

wow, I must have done something wrong, I sprouted them and made them into burger buns, and they were terrible, even my dog wouldn't eat them, and it was Alissa's recipe too, so I know I did something wrong.

never tried them again.

but wheat berries, I seem to be doing fine with, I use them all the time in burgers and buns and such.

In order to keep buckwheat form being slimy is , let it soak for one hour and rinse every hour for the six hours that it needs to soak.. I read that technique in another raw book and realized now my buckwheat is less slimy and it spouts much quicker... I love buckwheat cereal and my burger buns do come out okay yet it does smell fermented.. I'll try your technique Rawpriestess about the dehyr. temp to 130.
Peace

I soak my buckwheat for 15 minutes, and then sprout it for about 12 or 24 hours, and rinse like crazy! I only soak for 15 minutes cause I have found that works best and it does not get slimy if you only soak it that long and not sprout it to long, I read to soak it for 15 minutes in The Tree Of Life book, by Gabriel Cousins.
