Hello everybody!
I am in need of a way to make asparagus taste good raw. I like it steamed lightly, but since I am now 100% raw I dont want to do that. Should I soak it in water or something for a while to soften it a bit? Season it with olive oil and celtic sea salt/lemon??
ANybody with some good recipes for making asparagus taste good would be greatly appreciated!

Thanks, but actually I am looking for something more for just the asparagus. I loved asparagus steamed in oil and with garlic salt and pepper all over it, but I was hoping for a raw version. I hate the tast of it without anything being done to it.
I dont know, maybe I just need to venture out and experiment :eek:

so what you're after is more of a cooked sort of deal? If that's the case, I would marinate in olive oil with a little lemon, and on the generous side with the celtic salt, then put in dehydrator until desired texture, you can add your garlic and pepper too if that's what you're after (though I don't recommend the garlic salt, you don't know what the ingredients are). The marinating and being well coated with oil before going in the dehydrator will make it get closer to steamed versus it drying out in the dehydrator. If you're after that overcooked had-the-crap-cooked-out-of-it sort of asparagus, can't help you much!
You could also try thin slicing it and marinating it to wilt it.
There is also a nice asparagus soup in RAW by Charlie Trotter and Roxanne Klein.

You can marinate the asparagus then stick it in the dehydrator for a while. I just had that today at lunch and dinner.

Put some nama shoyu, olive oil and a clove or two of garlic in the food processor. Blend. Pour mixture over your asparagus and let them marinade all day or over night. Or you may just want to stick them in the dehydrator.

PS - the other recipes sound delicious as well, I just don't have a dehydrator :cool: :eek: :rolleyes:

The mixture will soften the asparagus. You can also add a little agave if you want a little sweeter marinade. This is a good marinade for mushrooms too.

Tombi, you are speaking my language : )......... I love mushrooms, too!
I was watching a Dr Graham video and he basically said that mushrooms had little to no nutritional value. He didn't say not to eat them, but he did say, the problem with them is that if you are eating them, you are not eating something else.....
MY point? That something else could be something BAD as well as good, so I'll stick to eating raw mushrooms when I want them, thanks, especially prepared the Tombi way!!

Okay my mushroom lover(s), how about this for a quicky. Slice an onion red or yellow in half. Take one half and make to slices of rings. Cut the rings in half. Put the rings in the marinade. Add mushrooms and your favorite seasoning. Mine is curry and cayenne. Marinade for about 20 minutes or as long as it takes you to slice a zuchinni or summer squash into "noodles" with a vegatable slicer. Place your noodles on a nice plate and pour you mushrooms and a little of your marinade over your "noodles". If you make your favorite salad with this little treat be sure to pour the rest of your marinade over your salad!

I use a potato peeler on the tougher part of the stem, it exposes the tender part of the root.
The first time I had asparagus raw I did not like it. Then I tried it frest from my Mother's Garden, love it ! I eat it raw alone.

Wow, these all sound sooooo good. I can't wait to have my raw asparagus with mushrooms, onions, and salad :)
raw figure, you said you use a peeler on the tougher part of the asparagus stem. Is this just the entire outside you peel, or is it a certain section?

rawfigure is totally right on that one, I forgot because I assumed everyone does that. Take a good potato peeler, and peel the asparagus from the top downward (leave the tip unpeeled). That way you can also use more of the length of the asparagus, as the bottom isn't really all that tough and woody, it's coming from the edge, which you peel off.
BTW, there's a big difference between really fresh picked asparagus and the stuff that's "aged" a little. Really fresh asparagus doesn't even make your pee smell funny, cooked or raw, everyone thinks that's a universal trait of asparagus, it's a trait of slightly aged asparagus.

I just marinated some asparagus in evoo, coconut animos and garlic and now it is in the dehydrator. Can't wait tell it comes out and to see if it is as good as it looks and smells.
Or you could simply dip raw asparagus in tahini or pumpkin seed butter and eat just as one would with crudites.
Personally, I'm happy to eat asparagus with literally nothing else, just as it is. I do this whether it's raw or steamed.

If marinating and then dehydrating don't get it mushy enough for you, try dehydrating FIRST and then marinating (and dehydrating again if you want.)
If you get the asparagus completely dry and then re-hydrate it in a marinate, it will be really mushy.
