ok, I have looked at tons of recipes on-line and just bought two recipe books on all raw food. And I found quite a few of them (mainly deserts) that contain maple syrup- is this realy raw? I thought it was made by taking the maple sap and cooking it for a while, till it got thinker. I love the taste, but it is so sweet, and I don't want to use it if it isn't realy raw. Does anybody know?

YEP, maple syrup is NOT raw, (well, you CAN find it raw on line) but I'd rather just use agave' nectar. Alissa sells it, and it tastes really great.


I know that Juliano put it in his book, and alot of others did too, but there was so much controversy over it, that most raw chefs are now using agave instead.

there will always be new information, or re-thinking going on in the raw movement, so it was a good call to come here and ask.

so Agave' nectar, not maple syrup, well, at least that is what they are all saying TODAY. LOL

Yeah, thats what I thought. I don't even know how it COULD be gotten raw... But I agree, I will substitue agave nectar instead of the maple syrup! Thanks rawpriestess!
