I remember somebody a while back talking about making and freezing raw egg rolls/spring rolls (I think it was RawPriestess?). I love SAD egg rolls and spring rolls, so I'd love to see someone's raw recipe equivalents (or point me to books that have such recipes; I haven't yet saved up enough money to buy Alissa's). :)

Spring Roll Wraps
by Elaina Love - taken from "The Complete Book of Raw Food"

4 large carrots
2 avocados, skinned and pitted
1 tsp. celtic sea salt
1 TBS. lemon juice
1 1/2 c. flax meal (1 cup of whole seeds before grinding)

Blend carrots w/ 1 cup of water until smooth. Add avocados and salt and blend 'til smooth.

Pour into mixing bowl. Add flax meal and mix by hand.

Place 1 1/4 cups of the batter on teflex sheet (or fruit roll tray, parchment paper, etc.) and spread thinly and evenly.

Score the tray of batter into 4 strips in one direction and 2 sections in the other direction.

Dehydrate at 105 degrees for 1 to 2 hours.

Flip wraps over and remove teflex sheet. Continue to dehydrate until wraps are still moist but dry enough to store. Store in ziploc bag at room temp. for up to a week, or in fridge for months.

Tip: If wraps seem too dry when you take out of dehydrator, place them in a ziploc bag with a moist, unbleached paper towel and seal it. Leave bag in a warm place and the wraps will be soft within 20 minutes.

I assume you can fill these with any veggies you like such as cabbage, carrots, mung bean sprouts, mushrooms, broccoli, etc. and perhaps marinate in some Nama Shoyu and olive oil or just olive oil with seasonings.

well this is how I do spring rolls

2 medium mushrooms (sliced)
1/2 carrot (julienne)
1 cup bean sprouts
1/2 cup snap peas
or any veggies of your choice

2 T almond butter

2 large green cabbage leaves

take cabbage leaf and put 1/2 of the veggies in it, and 1 T of almond butter on each, and hold tight and dip into

1 T Nama Shoyu
1 T agave nectar

YUMMY, I love this stuff,

you can also add some fresh grated ginger if you like, I also sometimes add some orange slices, this adds an interestig twist to the mix, and is delicious.

Oh my gosh, after reading this thread last night, I went out today and got some cabbage, mushrooms etc and made me some spring rolls. They were SOOOOOOOOO good. I'm not doing nuts so I left out the almond butter, and used a sauce of a little oil, fresh ginger, garlic, lemon, nama shoyu, and agave. Some of them I wrapped in cabbage & for some I put the whole little cabbage roll in a sheet of nori. AHHHH they were incredible. Wow. Thank you for the inspiration, and they are SOO easy.

I love raw food :)
