How long can nuts and seeds be stored before they go rancid? Can I freeze nuts and seeds if i decide to buy them in bulk? Thanks

Nuts in shell, and most seeds will keep for ages in the right environment...They even found seeds and grains in the pyramids that still germinate!
However, without thier protective 'suit' shelled nuts should be kept in cool dry places. I keep mine the the fridge and freezer. Some people will vacuum seal.

I was watching the foodtv network today and the tip from Paula was store nuts in a freezer bag (she had a commercial bag) and freeze for up to one year.

I store my nuts and seeds in the freezer also....I usually double-bag them so they do not pick up freezer smells. :-) That is the worst..when macadamias or pignolias are ruined in that way...or any nut for that matter.
